Change in taste perception of elderly people

Abstract
The increase of human lifespan makes concentrate people¡¯s attention on "quality of life". The sense of taste is essential
for maintaining quality of life or survival of organisms. Moreover, decrease of taste sensation is the most frequent sensory
disorders in elderly people. However, it is not well known that what and how develops taste change in elderly people.
Anatomical and histological investigation have hardly discover change in distribution or density of taste buds by aging.
Even in functional studies, the decrease of taste thresholds by aging is still controversial. The precise methods of taste
threshold measurements is developed recently, and the research employed that methods is still not common. The more
recent and controlled physiological approaches showed that the hypogeusia or dysgeusia would be induced by aging.
The possible causes of hypogeusia or dysgeusia are hypofuction of salivary glands and/or taste receptor cells, decrease
of taste bud regeneration, taste nerves or taste center degeneration as well as systemic diseases such as diabetes and
hypertension.
